The Magic Cake
The famous magic cake. A single preparation which gives 3 textures after cooking.
It’s sooooo good .. Recipe: 1/2 l whole milk 150 g sugar 125 g butter 115 g flour 4 eggs 15 ml of water 15 ml vanilla extract 1 C. to c. lemon juice 1 pinch of salt icing sugar
Preparation:
Melt butter in a pan. Once melted, put back in a bowl and
let cool to room temperature. Separate the whites from the egg yolks.

Put the yolks in a bowl with the sugar and whisk for 10 min until the mixture becomes clear and soft. While whisking, add a spoonful of very cold water and the vanilla extract. Add a pinch of salt and the cooled melted butter.
Continue beating for a few minutes. Sift the flour and add it to the absorber mixture completely. Heat the milk in a saucepan. Once hot, return to the preparation and the stirrer for 1 min. Remove lumps by sieving or using the back of a spoon.
Put the egg whites in a large bowl. Start whipping and display the lemon juice. Gently beat the egg whites until stiff, so as not to pry and obtain a rather liquid consistency. Add them to the previous mixture. Do not incorporate the whites perfectly (there must be small pieces of whites). Line and butter a 20 to 22 cm diameter pan. Pour the mixture into the mold. Preheat the oven to 150 ° C.
Bake for about 1 hour until the surface of the cake turns golden. Take out and let cool to room temperature. Cover with plastic wrap and refrigerate at least 2 h.
